If you want know the status of Apex servers, you just have to go to the site dedicated to the status of Apex servers. Once on the site, all you have to do is look in the section that suits you, depending on whether you play on Origins, Crossplay or on your EA account.
You will see in the relevant tab the state of the servers and their latencies by region of the world.
