How to unlock Sucrose
Sucrose is a character that can only be unlocked by wishing through summon banners. You will therefore have to use your primo-gems and then your crystals to try to summon it. It is, however, a 4-star character, so with a relatively affordable drop rate.

How to play Sucrose
An excellent spread
We're not going to lie to each other, Sucrose isn't particularly a very powerful character in combat, at least as a main character. He's far from being an extraordinary fighter and will hardly be your main DPS. However, it can be used as a support: he is a character who excels in area damage.
First, it will allow you to hit multiple enemies at once. But it's also a great strategy if you want to spread the elements through his Anemo attacks. This could be of great use for example when combined with Pyro or Electro.
It will therefore be used mainly for its skill and its ultimate, which do heavy damage, especially coupled with another character. This makes Sucrose a very useful character during time trial challenges since she can eliminate or in any case damage several weak enemies at the same time.
Avoid Sucrose like slimes
Unfortunately, where Sucrose is very bad is against slimes. This is undeniably its weak point. Since his attacks deal anemo damage that combines with the elements to create an elemental reaction, it's not very effective against these critters. So it's best to set Sucrose aside for these clashes.
Useful in reserve
If we will mainly use Sucrose as support for area damage and energy combinations, we must not forget its passive talent: fragile discovery allows Sucrose to have a 10% chance of obtaining two additional products during a synthesis. So remember to use it well for alchemy!
